The Amish Cook

As you know, there are ongoing struggles in bringing you the Amish Cook column every week. A recent turn of events has boxed me in a corner and I’m asking for readers’ help in getting the column through a short period of financial uncertainty.

Amazon is a great partner in fulfilling orders of the Amish Cook series of books and has helped the cash flow problems. With the sale of 300 cookbooks, I will have some financial independence from a few things that have held the column back. All six softcover cookbooks, including the newly released Best of The Amish Cook, Volume III, are now being offered for the lowest price that they’ll ever be offered for: $79 (plus $6 shipping) for all six 200-page titles through March 15. Volume III is extra special, including a short story by Lovina’s daughter Susan, and one by Elizabeth Eicher. There are contributions from all members of the Eicher family.

Try these delicious chocolate chip cookies, Lovina’s column will return next week!

Mortgage Chocolate Chip Cookies

4 1/2 cups flour

2 teaspoons soda

2 teaspoons salt

2 cups shortening

1 1/2 cups sugar

1 1/2 cups brown sugar

1 teaspoon water

2 teaspoons vanilla

4 eggs

12 ounces of chocolate chips

1 1/2 cup oatmeal

Preheat oven to 375. Sift flour, soda, and salt and set aside. In a separate bowl, stir shortening, sugars, water, and vanilla. Mix well. Beat in eggs and add set aside flour mixture. Then stir in chocolate chips and oatmeal. Drop by 1 /2 teaspoon onto cookie sheet. Bake at 375 for 10to 12 minutes. Makes about 80 cookies
