The Amish Cook By LOVINA EICHER Monday morning is upon us again. Time to start another week. I was glad to be able to send all five children back to school and in good health. The flu has been making its rounds in area schools and factories. That makes us all the more glad to see spring weather come. Our ground is covered again with quite a few inches of snow since Friday. Traveling was very difficult as there was ice, too. Yesterday we had sister Emma, husband Jacob, and family along with sisters Verena and Susan here. Jacob’s had their neighbor bring them so Steven wouldn’t get too much air riding in the buggy. It was a great break for Emma to get away from home. We had mashed potatoes, gravy, corn, meatloaf, salads, cheese, hot peppers, horseradish, and hard-boiled eggs that the children colored last week. For desserit it was homemade pudding cake, whoopie pies, and applesauce. The children had been practicing a play about Easter for a few weeks. They set everything up in the basement and had us adults come down to watch it. It was cute and I thought they did a good job.

Some of the Amish youth in this area gave an Easter program. It was for donation to help a young widow in this area. There was singing and some short plays. It was very interesting and they all did a wonderful job.

Our children enjoyed coloring eight dozen eggs last week. I usually do 10 dozen but I was a little short in eggs. They enjoy doing it and Kevin had a ball. He would take his egg out and throw it back in which created quite a mess until it was done. I put vinegar into theegg dye and Kevin thought the water looked good enough to taste. After one sip, though, he spit it out and didn’t try it again.

Baby Steven looked very happy to be at our house. He had a check-up last week and he needs a feeding tube in his nose as he won’t take a bottle or formula out of a cup yet. The formula is to help him gain the weight he lost through surgery. They need to put socks over his hands as he likes pulling out his feeding tubes. Emma had to put it in two times this weekend. Hopefully by the time he gets too active he won’t need it anymore. Emma had to learn how to put the feeding tube in which is not the easiest thing to do.

I hope everyone had a nice Easter Sunday. Let us remember all the suffering our Lord Jesus went through.

Here is my mother’s meatloaf recipe that I made yesterday. I used our own hamburger from the beef we butchered.

Meatloaf

2 pounds ground beef
3 /4 cups quick oats, uncooked
2 well-beaten eggs
1 /4 cup chopped onion
3 /4 cup tomato juice
2 teaspoons salt
1 1 /2 teaspoon pepper
Combine all ingredients thoroughly. Pack firmly in loaf pan. Bake at 350 for 1 hour.
Sauce:
2 tablespoons catsup
2 tablespoons mustard
2 tablespoons brown sugar
Mix over together and spread over meatloaf before baking.
