Another week has passed already, bringing us to the last day of February. Will March come in like a lion or a lamb? I am ready for spring weather but we have to take what we get. I have been trying to get more sewing done before the spring work comes along. We will be having church services at our house this spring sometime. That should work out great with the cleaning needing to be done anyhow. With the cold weather staying it looks like we’ll have to order another ton of hard coal to get us through the rest of winter.

Today we will do the laundry. We took advantage of the warmer weather last week by hanging out blankets, bedsheets, etc. They have dried real well and it smells good to have the fresh air-dried sheets since I have been hanging them in the basement most of the winter to dry.

Yesterday after church, Jacob and Emma and family were here, and we played games and had popcorn. So it was a well-spent Sunday afternoon with family.

Our hearts go out to the Amish family in Kentucky whose buggy was caught in rising water. (Editor’s note: Samuel Wagler, 8; Sarah-Mae Wagler, 5; Rosemary Wagler, 5 months; and their 11 year old cousin, Elizabeth Wagler, perished in the flood). I can’t imagine the hurt they are going through losing three children and a relative. I do not know the family but one of the men in our church is a cousin to them. A van-load from our church headed to the funeral in Kentucky. May God guide and comfort them through this awful tragedy.

Going through high water on a buggy can be dangerous, our own family has experienced close-calls. My Mom’s sister Lydia’s son and daughter were stranded once in their buggy surrounded by rising water. They took a detour home because of flooded roads, but then came to a spot where they didn’t know how deep the water was and the road was unfamiliar. They attempted to cross and the water rose to the buggy box. Luckily, the front wheel of the buggy lodged against a utility pole. My cousins climbed onto the dashboard and clung to the pole until they were rescued by a rowboat. They let the horse loose so it wouldn’t drown and it was found later alive and well. My Uncle Chris also had to be rescued once from his buggy in high water.

On a happier note, congratulations to my cousin Michael and Marissa they set March 19 as their wedding day. We received an invitation but won’t be able to attend their wedding in Missouri. We appreciated the invitation and wish them a long, happy married life.

Tonight, daughter Elizabeth and I are invited to a Pampered Chef party. One of the ladies in our church is having it at her house. I have never been to one so we decided to attend.

To Jean in Valparaiso, Indiana in answer to your question about the hamburger casserole: This is a casserole that you cook in a covered skillet on the stovetop on medium heat for 45 minutes or until potatoes are tender.

I will share my cousin Jane’s recipe for homemade bacon cheddar puffs.

Bacon Cheddar Puffs

1/2 cup milk

2 tablespoons margarine cut into small pieces

1/2 cup flour

2 eggs

1/2 cup shredded cheddar cheese

4 slices of bacon cooked and crumbled

1/4 cup chopped green onions

1/4 teaspoon garlic salt

1/4 teaspoon black pepper

Heat oven to 350. Bring milk and margarine to boil over medium heat. Add flour all at once stirring constantly until mixture forms a ball and leaves sides of pan. Remove from heat. Add eggs one at a time stirring constantly until mixture is smooth. Add remaining ingredients. Drop by teaspoons onto greased, foil-lined cookie sheet. Bake 25 minutes until puffed and golden brown. These can be wrapped securely and frozen. Makes about 3 dozens.
